A little Mai Tai talk-story: Victor "Trader Vic" Bergeron invented the concoction in 1944 when he mixed Jamaican rum, juice from a fresh lime, a few dashes of orange Curacao syrup, some french orgeat syrup, and rock candy syrup. It was served to some friends from Tahiti, who promptly proclaimed "Mai Tai, Roa Ae!", which in Tahitian means "Out of this world, the best!".
Mr. Bergeron was not happy when many restaurant, lounges and bars claimed to be the birthplace of the Mai Tai. He contacted the original group of friends that received that first concoction, and had them sign an affidavit attesting to it's original origins.
More often then not, when you order this drink it will also include Pineapple, Orange Juice, and other fruity juices. Sometimes a tiny paper parasol is stuck into the pineapple wedge on the rim of the glass.
Here are two Mai Tai recipes.
Mai Tai (Pineapple variation)
1 ounce light rum
1/2 ounce triple sec
1/4 ounce Rose's lime juice
1 1/2 ounces pineapple juice
1 1/2 ounces orange juice
1 dash of Grenadine
1/2 ounce dark rum
1 ounce light rum
1 ounce gold rum
1/2 ounce orange curacau
1/2 ounce Orgeat (Almond Syrup)
1/2 ounce fresh lime juice
1 ounce dark rum
Shake all but the dark rum with cracked ice. The dark rum should float on the top. Serve with a straw. Strain into old-fashioned glass.Top with dark rum.
Garnish with a Maraschino Cherry, pineapple wedge.
